Toasted Oak & Vanilla
Nose
Immediate hit of metallic Pot Still spices. Ripe Orchard fruits and dark berries. There is a distinct Cherry note which may be described as marzipan or almonds dusted in icing sugar. A sweet engaging nose.
Palate
This is a bold Spicy arrival. Fruit forward with stewed orchard fruits. Mouth coating with sweet caramel and vanilla, very intense concentrated flavours meet the always present Pot Still spices with black pepper prominent. Water amplifies the flavours, it can take a significant amount of water, 7/8 drops. This doesn’t affect the presentation the Pot Still spices are ever present and layers of fruit and vanilla sweetness.
Maturation
A unique compilation of 7 casks. The base layer of Bourbon cask leads to a collection of Sherry casks, Oloroso, Pedro Ximenez, Palo Cortado & Amontillado. Finally the Whiskey is finished in Moscatel & French oak cask. A mash of Unmalted & Malted Barley with a small % of Oats and Rye
