Nose
The peat presents itself as a soft medicinal note, like a hospital ward. Tart red fruits with puffs of icing sugar produce a very rounded, soft nose which melts into soft ripe red fruits, lingering note of morello cherries / marzipan.
Palate
The Morello cherries and marzipan continue on the palate. Tart bitterness on the sides of the tongue create a mouthwatering dram. Thick mouthfeel with vanilla and rhubarb and custard boiled sweets. The Peat is present but not overpowering, like the dying embers of a bonfire.
Maturation
Bourbon casks finished in Pinot Noir casks for minimum of 2 years.
